Vegan Chickpea Brownies

These vegan, gluten-free, egg-free chickpea brownies are beyond delicious and so easy to make! They’re high in protein, healthy fats and fibre and free of white sugar. Kids can make them in a jiffy, perfect for toddlers who love getting their hands dirty in the kitchen and tasting the batter.

INGREDIENTS:

1 (15 oz) can of chickpeas

1/2 cup natural peanut butter, almond butter or seed butter of choice

1/3 cup of pure maple syrup

2 tsp vanilla extract

1/4 tsp salt

1/4 tsp baking soda

1/4 tsp baking powder

1/3 cup vegan chocolate chips

DIRECTIONS:

1) Pre-heat oven to 350 F

2)Combine all ingredients EXCEPT CHOCOLATE CHIPS in a bowl and then pour into a blender. Blend until smooth.

3) Pour back into the bowl and add in chocolate chips. Fold in.

3) Spray a 8'“x 5'“ rectangular pan with cooking spray of choice (olive, coconut, avocado) and pour batter inside, gently smoothing it out.

4) Bake for 25 minutes or until toothpick comes out clean.

5) Cool on drying rack and cut into shape of choice.
